Roasted Green Tomato Soup

Ahhh winter is finally here and the weather forecast in your area is probably cold or you’re having a bit of snow.


Stepping out in this kind of cold weather this time of year can be daunting.



No better time then to bust out your favorite soup recipes! This particular recipe is healthy, easy, inexpensive, and most importantly delicious. Roasted Green Tomato Soup. A quick recipe I made on a whim due to the green tomatoes that mysteriously started growing in our backyard not to long ago.



  • half a dozen green tomatoes
  • one yellow onion
  • garlic cloves (6-8)
  • 2 to 3 cups chicken or vegetable stock
  • 1/2 cup Spanish EVOO (or regular EVOO will do)
  • couple sprigs of thyme
  • Salt & pepper
  • A blender or immersion blender



First you’ll need about half a dozen green tomatoes sliced.


Preheat  your oven to about 400F degrees. Place your sliced tomatoes (along with the sliced yellow onion) on a baking sheet (I used a silicone mat). Drizzle Spanish EVOO (extra virgin olive oil) on the tomato & onion slices and sprinkle salt & pepper. If you love garlic like I do take a couple of cloves of garlic and roast them along with the tomatoes. I also threw in some thyme to add some flavor.


Roast in the oven for about 25-30 minutes. I then placed all the ingredients into my blender and blended into a puree. I then transfered the soup into a large pot. This is where you add your chicken or veggie stock (I prefer using my homemade veggie stock much more flavor). Cook on low heat.You can adjust the consistency to your liking with adding more stock. That’s why I like to add a cup of stock at a time instead of pouring the whole 3 cups in.  You can also add more salt & pepper to your liking as well. Some people like to add a bit of heavy cream but I didn’t. It is optional feel free to add if you’d like!

Now the aroma of the roasted soup should be filling your kitchen! Pour a nice amount of the roasted soup in a bowl.


I then added some grated Asiago & Fontina cheese. Along with a few pieces of diced green tomatoes.
