In honor of National Ice Cream Month (July) and National Ice Cream Day (July 16th) I am dedicating my next few blog posts to ICE CREAM RECIPES!
I don’t know anyone who doesn’t love a good creamy ice cream! Even the non-lovers of ice cream will not be able to resist these homemade recipes!
Today’s recipe is ROASTED CHERRY ICE CREAM
This recipe consists of only 3 INGREDIENTS! Pretty simple right?
Cherries
Honey (for my vegans out there use Agave or Maple Syrup)
2 cans of Coconut Milk
Let’s get started! First up you’ll need to buy 1 to 2 lb of cherries (I live in Texas and organic cherries ran me about $3.99 a pound). Preheat oven to 450°. Place the whole cherries in a small roasting pan (I used a cake pan) and sprinkle on the 2-3 tablespoons of sugar.
Place in the oven and roast until the cherries start to release their juices and the sugar melts and begins to caramelize (this took about 20-25 minutes for me, I stirred the cherries every 5 minutes.) If you want to make this ice cream boozy (like I did) add about 1/4 cup of your favorite liquor! I chose to go with Ciroc Summer Colada flavored vodka. Add the liquor the last 5-10 minutes of roasting.
Remove from the oven and let cool. I let my cherries marinate over night before I started to make the ice cream, but that’s optional. To make the ice cream you need 2 cans of full fat coconut milk (13oz)
Stir the milk so it’s nice and creamy. For sweetness add 1/2 cup of honey or agave if you’re vegan. Add about 1 teaspoon of pure vanilla extract.
Add the roasted cherries to the coconut milk mixture.
If you have an ice cream maker, pour your mixture into your ice cream maker. If you do not have an ice cream maker (like myself) freeze the mixture overnight.
Save a little bit of the roasted cherries to add on top.
Last step….stuff your face with this creamy sweet goodness!
