Tomorrow, July 16th, is National Ice Cream Day!!
For the past 2 weeks I’ve been posting my favorite ice cream recipes but this happens to be one of my all time favorite ice cream flavors.
This too takes no time at all and I feel its a mix between ice cream AND yogurt. It’s a perfect summer treat! Creamy and delicious!
- 2 cups frozen blueberries
- 1 cup granulated sugar
- 1 cup milk
- 1 cup heavy cream
- 1 tablespoon pure vanilla extract
- Vanilla Greek Yogurt (one 5.3 oz)
Cook the blueberries and sugar until sugar is completely melted. Blend mixture in your blender (I only blended for a few seconds I wanted nice chunks of blueberries in my ice cream). Mix in the remaining ingredients. If you have an ice cream maker just follow the instructions per your particular brand. If you do not have an ice cream maker then stick your yogurt mixture in the freezer over night.
It produces a beautiful color and tastes AMAZING!
